Recipe. Tyrolean potato pancakes

These delicious potato pancakes with cabbage are a Tyrolean speciality. How can you make them at home? Markus Steinmayr from the traditional Goldener Löwe inn in Hall in Tyrol has shared his personal recipe with us.

Ingredients and method

For 4 people, you will need the following ingredients:

• 600 g potatoes (floury)
• 170 g plain flour
• 4 egg yolks
• a little grated nutmeg
• salt, pepper
• sauerkraut, to taste

Here’s how to make the potato pancakes:

Boil the potatoes in their skins, leave to cool briefly, peel and mash. Mix with the remaining ingredients to form a dough and roll it out with a rolling pin to a thickness of about one centimetre. Cut the dough into rectangles (8 cm x 6 cm) and fry them in hot oil. Served with sauerkraut, this is a wonderful classic from Tyrolean cuisine. Enjoy your meal!
