Recipe. Tyrolean game
The meat featured here is a roe deer knuckle. It is part of the roe deer leg and is a very tender and lean cut of meat. Game meat is generally low in fat and rich in protein, minerals and vitamins. When prepared correctly, it therefore also has particular nutritional value. The term ‘game’ refers to meat from wild animals that are subject to hunting regulations.
Ingredients and Method
Ingredients:
• Game meat
• Garlic
• Ground cinnamon
• Juniper berries and bay leaves
• 1 bottle of red wine
• Vegetables such as onions, celery, carrots and parsley
• Cloves
• thyme
• salt and pepper
• red cabbage and potatoes as a side dish
