Recipe. Sacher Torte

The origins of the famous Viennese chocolate cake can be traced back as far as the 18th century. The Sacher Torte was invented in its basic form by Franz Sacher in 1832 and perfected into the form we know today by his son, Eduard Sacher, whilst he was an apprentice to the Imperial and Royal Court Confectioner Demel.

Ingredients and method

For 4 people, you will need the following ingredients:

• 20 dag butter
• 20 dag sugar
• 20 dag chocolate (melted)
• 20 dag almonds
• 10 dag flour
• 1 sachet of baking powder
• 5 eggs

Here’s how to make the Sacher Torte:

Cream the butter with the sugar and eggs until light and fluffy. Add the chocolate, almonds and flour with the baking powder. Pour the batter into a springform tin and bake for approx. 50 minutes at 180°C (fan oven). Remove the cake from the tin and leave to cool. Cut in half, spread with apricot jam and decorate with chocolate icing.
