Pipistrello Weinbar

In the unique historical setting at Stadtgraben 22 in the old town of Hall, Eva Martvonova and Christoph Bickel are jointly running the small wine tavern featuring culinary highlights from the kitchen. 
 

Six toques will unite the two gastronomy professionals at Pipistrello to pamper their guests. 4-toque chef Christoph Bickel and 2-toque restaurant manager Eva Martvonova are fulfilling a shared dream with the opening on Friday, September 10, 2026: “We discovered the offer for the tavern online while on vacation and immediately thought it would be something for us. We were looking for something that we could run together without employees and that still allows us enough time to be hosts for our guests. We both know the old town of Hall, but for us, it was mainly about the location, size, and ambiance in this unique historical vaulted cellar. It has so much charm and radiates coziness, exactly what we were looking for.”
 

With almost 25 years in the gastronomy industry, the couple has a wealth of experience both domestically and internationally. Quality in service and in the kitchen is their top priority: “We last worked as employees for three years, but we realized that we prefer to make decisions ourselves and live out our ideas and preferences in the kitchen and service. However, it is important for us to emphasize that we will not operate a high-end establishment. We want to offer a selection of Austrian and international wines, spirits, non-alcoholic drinks, and of course, important, small but fine and especially self-prepared dishes such as sourdough bread with alioli, tapas, beef tartare, tiramisu, etc. The dishes will be seasonal and change from time to time.”
