Autumn recipe: Pumpkin cake


Late-summer temperatures, vibrantly coloured natural landscapes, falling leaves and unobstructed views of the Tyrolean mountain scenery are currently making for a golden autumn in the Hall-Wattens region. Whether after an autumnal hike or with a Sunday coffee, pumpkin cake brings autumn to your plate and provides the perfect culinary finishing touch to a lovely autumn day.

Ingredients for pumpkin cake

  • 2 eggs
  • 300g butter
  • 300g cooking chocolate, diced
  • 400g flour
  • 300g pumpkin purée (equivalent to approx. 600g uncooked pumpkin)
  • 400g brown sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1 tsp nutmeg
  • 1 pinch of cloves
  • 1 tsp ginger
  • 1 pinch of allspice

How to make pumpkin cake

The washed pumpkin is cut into small pieces, cooked until soft, and then puréed. Whilst the pumpkin is cooking on the hob, we mix the spices (cinnamon, nutmeg, ginger, cloves and allspice) to make a spice mixture.

Next, we mix the brown sugar, salt, two eggs and softened butter until light and fluffy. Then we add the pumpkin purée we made earlier. By adding the flour, baking powder and the spice mix, the initially runny mixture turns into a firm batter. To finish the batter, we stir in about half of the chopped chocolate.

The pumpkin cake batter is now ready. Once it has been spread into the desired tin, we scatter the remaining chocolate over the top.

Bake the pumpkin cake in the oven at 180° (fan) for about 40 minutes. Enjoy your meal!
