Crispy spelt bread
Homemade bread simply tastes great. If you can’t make it to the farmers’ market, farm shop or your favourite baker’s, here’s a simple recipe for spelt bread.
Ingredients for spelt bread:
- 250 g spelt flour
- 250 g wholemeal spelt flour
- 250 ml buttermilk
- approx. 200–250 ml lukewarm water
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 2 tsp salt
- 1 tsp sugar
- 2 tsp bread spices (fennel, coriander, caraway, finely ground roasted malt)
- 1 packet of dried yeast or half a cube of fresh yeast
First, mix the flour with the bread spices, the sugar and the salt in a mixing bowl. Make a well in the centre with a fork and pour in about 50 ml of the water. Dissolve the yeast in this. Then mix in the oil, vinegar and buttermilk. Whilst stirring, gradually add the rest of the water to the dough. Mix the ingredients together to form a smooth dough.


Leave the dough to rest for at least 30 minutes. Preheat the oven to 230° on the fan setting. Shape the loaf as desired, brush with a little buttermilk and dust with flour. You can score the surface of the loaf with a knife if you wish.


To achieve a crispy crust, the bread is first baked for about 10 minutes at 230°, then for the remaining 50 minutes at 180°. If using a loaf tin, the bread can be baked without the tin for the last 10 minutes. The bread is ready when it sounds hollow when tapped on the underside. It is important to let the bread cool down after baking.

Is there anything better in spring than homemade bread with butter and radishes? Not for me, anyway. I like my radish bread best when it’s garnished with fresh chives or cress, along with salt and pepper.
