Homemade cherry jam.
To coincide with the cherry harvest, we’ve included a simple recipe for homemade cherry jam for you:

List of ingredients for cherry jam:
- 500g 1:2 jam sugar
- 1 kg cherries
- a little lemon juice
- 1 cinnamon stick
- Optional: Amaretto liqueur
The quantities given are roughly enough for six small or two large jam jars.

Before pitting the cherries, they should be washed. The jam jars set aside for this purpose should also be washed thoroughly.

The most time-consuming part of the process is stoning the cherries. There are many different methods for doing this (pitting machines, knives, straws, etc.).

Next, combine the pitted cherries in a saucepan with the jam sugar, the cinnamon stick and the lemon juice. If you prefer, you can also purée the fruit.

Stirring constantly, bring the mixture to the boil and then simmer for about 5 minutes. Remove the pan from the heat and take out the cinnamon stick. If you like, you can now add a dash of Amaretto to the jam.
The cherry jam is poured into jars whilst still hot. Seal the jars immediately and turn them upside down for about 10 minutes.
If stored in a dark place, the jam will keep for about a year.
