Recipe: Apfelkiachl – a classic Tyrolean dessert
Who hasn’t heard of Apfelkiachl – a classic Tyrolean dessert? Some people also call them Apfelradln or Apfelkringel. One thing is certain, though – whatever you call them, they simply taste irresistible!
There are plenty of recipes for them, but today I’d like to share my absolute favourite recipe – how could it be otherwise – from my grandmother! Mmm… I can smell them – those freshly baked apple rings sprinkled with cinnamon and sugar – they really bring back childhood memories!

Ingredients for the apple fritters
4 large, tart apples
Juice of 1 lemon
Cinnamon
Icing sugar (I prefer fine granulated sugar)
150 g flour
3 eggs
1 pinch of salt
120 ml milk
a dash of rum
oil for the pan – clarified butter works brilliantly too; I always use half and half

How to make Apfelkiachl
1. Peel the apples, cut them into slices about 3 cm thick and remove the core. You can also use an apple corer for this.
2. Drizzle the apple slices with lemon juice straight away to prevent them from turning brown.
3. Place the ingredients for the batter in a mixing bowl and beat with a mixer for a few minutes until frothy.
4. Fill a frying pan with oil or clarified butter so that the apple fritters can float in it.
5. Dip the apple slices into the batter, let them drain off a little, and fry in the hot fat for about 3 minutes; turn them over and fry for a further 3 minutes until done.
6. Remove the golden-brown apple fritters from the pan and drain on kitchen paper. Sprinkle with cinnamon and sugar whilst still hot!
You can eat the Apfelkiachl on their own or with a scoop of vanilla ice cream. But they taste unbeatable with vanilla sauce whilst they’re still warm!!
